Apple Fritters

- 4 apples
- 250 gms (1¾ c.) flour
- 50 gms (1/4 c.) sugar
- Grated zest of 1 lemon
- ½ tsp. baking powder
- pinch of salt
- 1 egg, separated
- 200 ml (¾ c.) milk
- Canola, corn or vegetable oil for frying (enough for 7 cm.(3 in.) in pan)
- Confectionary or powdered sugar for dusting.
- Peel and core apples and cut into slices.

- In a medium bowl, beat together flour, sugar, lemon zest, baking powder, salt and egg yolk.
- Add milk slowly and mix until smooth.
- In a separate bowl, whip the egg white until stiff. Add it to the batter. Mix until combined.
- Dip the apple slices in the batter.

- Carefully add them to the hot oil (190°C/370°F).

- Turn them over when golden brown.
- Drain well and sprinkle with confectionary sugar.
