Linguine al Limone (Linguine with Lemon)
  • 1 lb. linguine, tagliatelle or fettucine
  • 4 T. butter
  • 2 T. olive oil
  • ¼ grated lemon zest (about 4 lemons)
  • strips of lemon zest from 1 lemon
  • ¼ tsp. salt
  • freshly ground pepper
  • ⅓ c. grated parmigiano cheese
  1. Cook pasta in salted water according to package directions for al dente.
  2. Melt butter over low heat in large skillet.
  3. Add olive oil.
  4. Add lemon zest, lemon strips and salt and heat 1-2 minutes, making sure not to boil.
  5. Drain pasta, add to pan and heat another minute. Add lots of freshly cracked pepper.
  6. Toss with grated cheese and serve.
