In a bowl, using either an electric mixer or a wooden spoon, mix the sugar with the butter until creamy.
Add the egg and mix well.
Slowly add the flour and blend well.
With a spoon, form a small long oval shape about 8 cm/3 " on parchment or baking paper lined cookie pans.
Bake for 5-8 minutes until lightly golden.
Variations: Sprinkle cane-sugar, colored sugar grains, cinnamon or cocoa on top to decorate before baking. Or add chopped candied lemon or orange peel to the dough.
Makes about 20 cookies.
