Mother’s Day! My son wanted to celebrate this day dedicated to all mothers in a special way by baking some biscuits for me. We chose some really “tempting” biscuits which are easy to make and are prepared with three simple ingredients – butter, sugar and flour. Their name literally means “cat’s tongue” as their shape and size resemble the tongue of a cat.
These are a classic of Italian cookies and every bakery/pastry shop offers them so I thought they were difficult to prepare, only for expert bakers. Instead this recipe I discovered really takes just a matter of minutes. No need to whip whites and no pastry bag. They are perfect with a cup of tea or at the end of a meal, even if my son Alberto usually eats all of them before we even take the second tray out of the oven. This time however, since it will be my day, he’ll think twice before eating them all!
So easy to bake … a child’s play! They are thin and crispy and the aroma they create while baking is wonderfully homey and comforting. Elegant and light as a feather, these little cookies are also fabulous with a luxurious gelato, a sinful, creamy “zabaione”…or just for your pleasure. Happy Mother’s Day!
Lingue di Gatto Biscotti (Cat's Tongue Cookies)
- 65 grms/4 T. butter, melted
- 90 grms/1/2 c. sugar
- 1 egg
- 60 grms/1/2 c. flour
- Preheat oven to 180°C/350°F.
- In a bowl, using either an electric mixer or a wooden spoon, mix the sugar with the butter until creamy.
- Add the egg and mix well.
- Slowly add the flour and blend well.
- With a spoon, form a small long oval shape about 8 cm/3 " on parchment or baking paper lined cookie pans.
- Bake for 5-8 minutes until lightly golden.
- Variations: Sprinkle cane-sugar, colored sugar grains, cinnamon or cocoa on top to decorate before baking. Or add chopped candied lemon or orange peel to the dough.
- Makes about 20 cookies.
