Italians enjoy drinking coffee in the morning whether it is a homemade espresso or one had in the local bar – and it is always a moment of wellbeing. During a work break or after dinner, coffee makes simple moments during the day a real pleasure. And as an extra bonus, coffee has many virtues – it protects us from aging, soothes headaches and helps with digestion.
I love my coffee and these coffee flavoured cookies are the perfect accompaniement. Not a coffee drinker? With a cup of afternoon tea, a glass of cold milk, an after dinner wine or completely on their own, these bite size cookies are fantastic. I like to bake these in small wrappers-then I pack them in a pretty box or basket and give them as gifts!
Biscotti al Caffè {Coffee Cookies)
- 1 Big Tablespoon instant coffee
- 1 Tablespoon of Kahlua or other coffee liquor
- 60 g (4 T) butter at room temperature
- 100 g (1/2 c) sugar
- 1 egg
- 180 g (1¼ c) flour
- 1 Tablespoon baking powder
- 1 pinch of nutmeg
- 1 pinch of salt
- Confectionary sugar for dusting
- Preheat oven to 180°C/350°F.
- In a small bowl, dissolve the instant coffee in the Kahlua.
- In another bowl, beat the sugar and egg until it comes together, about 2 minutes.
- Add the sifted flour, baking powder, nutmeg, salt and coffee/Kahlua mix and beat until combined to obtain a soft and homogeneous dough..
- With your hands work the dough into small balls about 3cm/1 ".
- Place directly on cookie sheets or in small wrappers.
- Bake for 10-12 minutes. Makes about 24 cookies.
- Sprinkle with powdered sugar before serving.
